Almonds Raw
Almonds are not true nuts being the seed of a stone fruit, akin to a peach or plum. They grow on trees in Mediterranean-like climates.
The stone is inside the leathery fruit, inside which is seed. Of the two types of almond, bitter and sweet, it is the sweet one that is used for traditional deserts like marzipan. The bitter almond is poisonous when eaten raw and is generally used only for its oil. Blanched almonds have had their brown skins removed by immersion in boiling, then cold water.
Almonds are a low carbohydrate, vitamin E, manganese, magnesium and riboflavin rich food, with some cholesterol lowering effects.
