Sunflower Seed
The sunflower gives us much more than just a delightful summer spectacle. Each tiny flower in it's 'face' results in a seed. once dried, the seeds are separated into types by their colour. Black seeds have the most oil and are usually reserved for this. Stripy black and white seeds are usually used for human consumption as either ingredients for baking or as as a snack food once the seed coat is removed to reveal the creamy-white kernel. They can be further roasted in oil or dry roasted and are sometimes salted.
Sunflower seeds are good source of thiamine, folate, vitamin B6, magnesium, phosphorus, copper, manganese and selenium, and a very good source of vitamin E.
